Baking with molasses: 3 PT-approved Christmas gingerbread recipes
What is the best thing about Christmas? Well, the food, of course.
I’ll keep this short & sweet (pun intended); today you’re getting 3 recipes that I have personally tried and
tested tasted. I ate them all.
What’s so special about these recipes then?
Well, they all just so happen to include molasses as a key ingredient. I used pure Blackstrap molasses for 10 points.
What’s so special about Blackstrap molasses then?
Well, it just so happens to be, essentially, what’s left over after the maximum amount of sugar has been extracted from raw sugar cane. It’s like sugar-free sugar. Containing the vitamins and minerals that it absorbed from the sugar cane plant, it’s low GL and can provide your Christmas baking with a guilt-free sweet ingredient.
I’m not sorry.
So, without further ado, here are your wonderfully Christmassy, gingerbready, molassesy recipes…
Desserts With Benefits ‘Healthy Gingerbread Cookies’
Who doesn’t love gingerbread men? These put standard gingerbread men to shame. Beautifully rich in Christmassy flavours, they’re chewy and delicious, yet crisp at the same time. Perfect for parties, but just as good for eating all to yourself of course.
Bakerita ‘Chocolate Chunk Gingerbread Blondies’
Oh. Hot. Damn. These badboys are just beyond anything you will find in the supermarket. They are the moistest, chewiest blondies with thick chunks of chocolate that melt in your mouth and make you weak at the knees.
Bakerita ‘Soft Gingerbread Cookies’
If a biscuit and a cake made sweet, spicy love, these would be there love child. The molasses and spices provide a real deep flavour… and that texture… oh my. I believe in America they have things called Snickerdoodles – these are like the gingerbread version of those.
